Pancake Puffs and Rainbow Fruit Platters

Pancake Puffs and Rainbow Fruit Platters aren’t just colorful, they’re healthy too! These colorful mini pancake puff and fruit trays are super versatile and easy to make.

Pancake Puffs and Rainbow Fruit Platter

This breakfast platter is sure to make your mornings happy! Our Non-GMO Belgium Pancake Puffs are so easy to prepare. You pop them into the microwave for 30 seconds, sprinkle some powdered sugar on them and then serve them along-side your favorite fresh fruit. This vibrant platter also has some creme fraiche to take it up one more notch.

Michelle finished it off with a bit of fresh mint to elevate the flavors.

The combinations don’t just stop with fruit, though. You could also add fun things to this plate to take it from breakfast to a stunning dessert board. Melted chocolate, a Greek yogurt dip, melted peanut butter, etc. would all be excellent options. You could turn this brightly colored fruit platter into a sip on your favorite fondue board.

Getting the kids involved in creating Pancake Puffs and Rainbow Fruit Platters is also a fun way to help them learn to make healthy choices. They can help by picking out their favorite fruit and sprinkling the powdered sugar on the pancake puffs.

Instead of making one large platter, you could also use small salad plates so each child can create and enjoy their creation. Using maple syrup or a sweetened Greek yogurt dip will make eating both the fruit and pancake puffs so much fun for both kids and adults alike.

The only struggle might be getting them to eat something other than pancake puffs from breakfast moving forward.

Savory Oatmeal

Skip your traditional sweet oatmeal and give this savory oatmeal combination a spin instead! The combination of whole grain oats, red onion, sauteed spinach, a soft boiled egg, chicken sausage, and avocado make not only a delicious breakfast but a quick lunch or easy snack, too!

Savory Oatmeal

If you haven’t had savory oatmeal before, you’re in for a treat! It may sound odd to add savory toppings to your oatmeal, but the combination is truly delicious. Think of this more like a quinoa or rice bowl that you would have for breakfast. Or, if you grew up eating grits for breakfast, this would relate.

The great thing about savory oatmeal is that it comes together really fast, too! Especially, if you have done a little meal prep on Sunday. You can have a delicious oatmeal bowl like this ready in minutes. Five minutes is seriously all you will need.

It starts with a base of our Organic Unsweetened oatmeal. We didn’t add any seasonings to the oatmeal, but you could easily add in some garlic powder, onion powder, salt, pepper or even nutritional yeast! Nooch (a.k.a nutritional yeast) adds a nice, nondairy, cheese-like flavor.

Then we topped the oatmeal with a hard-boiled egg ad chicken sausage that we already had prepared from the fridge, sautéed up a bit of spinach, added some diced red onion. Of course, we can’t forget the avocado. It goes with everything, right? Finally, we finished it off with some Everything But The Bagel Seasoning.

The flavors come together so well. Plus, this bowl offers a great balance of carbs, protein, and healthy fats, and sneaks in some veggies in the morning. Sounds like a win, don’t you think?

Are you convinced to try savory oatmeal yet? If not, there are still great options for sweet versions like this Strawberry Oatmeal Parfait or these eight oatmeal combinations that are great for meal prep.

Keto Egg White Patty Pizzas

Pizza night is always a favorite around here. But, speaking truthfully, it can be both our best friend and worst enemy. We want to eat pizza because it tastes so delicious, but we also want to be a little bit more mindful of what we are consuming. The occasional pizza night is A-ok! But, when it turns into a weekly thing, well, that’s a whole other story.

However, despite not wanting to eat pizza every week, we still crave it because pizza is one of our favorite foods. We knew that a solution had to be put in place to satisfy this weekly craving. Our alternative are these egg white patty pizzas!

Not only are these much cheaper (and healthier!) to make, but they are guaranteed to satisfy your pizza craving, sans the carbs. Now, you might be thinking that these look kind of like an omelet. Truthfully, they are! They are mini open-faced omelets topped with pizza sauce, cheese mini pepperoni, and fresh basil. Do you know those leftover “pizza for breakfast” cravings? Yup, these would work here too.

Easy as 1,2,3.

These keto pizzas are so easy to toss together. Just pre-heat your oven, place your egg white patties on your sheet pan, top with sauce, cheese, and pepperoni and then bake. Finish off with fresh basil, if desired.

You could also make this a little more fun for the kids and let them put their toppings on. Kind of like a “build your own” pizza bar. Include veggies, diced chicken breast, other cheese options, etc. The possibilities are endless, and the kids will be happy when they can have “pizza night” weekly.
