1 tablespoon Pesto:
1-cup pine nuts · 1/2 cup grated Parmesan cheese · 1-cup parsley · 1-cup basil · 1 teaspoon · lemon juice · 1-cup grape seed oil · 1/2-cup olive oil
- ¼ sliced avocado
- 1 slice fresh tomato
- 1 Good Food Made Simple Egg White Patty
- 2 slices whole grain bread, toasted
In the food processor combine pine nuts, parsley and lemon juice. Blend until fully combined, about 30 seconds; slowly drizzle in the grape seed oil, and then the olive oil. Once the oils are fully incorporated, add the Parmesan cheese and mix, allowing it to thicken the pesto. Spread 1/2 tablespoon pesto on each side of toasted bread. Top with egg patty, tomato and avocado.
